
Recipes that make you travel back to a certain place, this time: England!
Welcome to the corner of my blog where I share recipes I made after I miss my travels from a certain place. When I miss my time in England, I make scones. For the longest time I was looking for a vegan version, and after a lot of testing, I created a recipe for the most delicious vegan scones!
Vegan Scones
Prep time: 8 minutes
Oven: 12-17 minutes
Total time: 20-25 minutes
Serves: 6
Ingredients
250 grams self-raising flour
40 grams sugar
40 grams butter (melted)
120 milliliters plant-based milk
Pinch of salt
Instructions
- Preheat the oven to 200°C (400°F) and line the oven rack with baking paper (do not put it in the oven yet).
- Mix all ingredients in a bowl. If there are no more lumps and the mixture has firmed up, it’s ready for the next step. You can make a total of 6 scones from the mix.
- Form 6 balls with your hands, but don’t press the dough. Do it very loosely, as if you were tapping the dough. This will introduce more air into the scones, which gives them their typical scone look and makes them taste better.
- Then place the dough on the baking paper.
- Bake the scones for about 12 to 17 minutes, until golden brown.

Topping
Sweet: jam and whipped cream.
Savory: add almonds to the mix after the base mix has no more lumps. Once the scones are baked and cooled, top each cut scone with a slice of (vegan) brie.
Something different for a change. But oh so delicious!
When I just turned 19 I travelled on my own to England where I had the time of my life living, studying and working in the city called Exeter. But I also remember going to Bath during my stay, that’s where I had the best high tea I ever had in my life. Years later I still dream about the hazelnut cake, sandwiches and other sweet treats. I also will never forget the time I had my first scone, so simple but delicious. Thankfully food and the making process always makes me feel closer to the dear memories I made and a home that I still carry in my heart.
